Chris Chronopolous installed seven of the Saiko5 fixtures in a geodesic dome as an interactive art display at Burning Man 2011.
Brian Neltner, Steven Neltner, Chris Chronopolous, David Greenberg, and Becky Zant went to Apogaea in 2011 where they put up a geodesic dome featuring 8 of the Saiko5 Fixtures controlled using puredata software for music analysis.
Dan Julio has managed to hack a Saiko5 LED Light Fixture so that it can be controlled over DMX. It's really awesome! According to Dan's website:

15 Saiko5 WiFi LED Light Fixtures were installed at the Temple of Visions in Los Angeles for the LA2010 MAPS conference. The artwork at the installation is the work of Michael Divine and Amanda Sage.
Ten of the Saiko5 WiFi LED Light Fixture were recently used at an installation at the "Acoustic Combustion" art camp at the Burning Man festival in 2010. The collaboration resulted in wirelessly controlled lights with 16-bit brightness resolution, combined with the use of the aubio sound analysis library for real-time analysis of music from a live D.J.
This installation was done by R.J. Ryan, Perry Hung, and Brian Neltner, using the "Maple" board from Leaf Labs, which uses an ARM Cortex M3 at 72MHz and a WiShield to enable wireless connectivity and 16-pit PWM to control the brightness of each light.
